Roasted Winter Vegetables

1 cup each of 1/2 inch cubed yams, sweet potatoes, yellow beets, fennel, carrots, and shallots.

1 clove minced garlic.

1/4 cup extra virgin olive oil.

Course salt and fresh ground pepper to taste.

4 3-inch sprigs fresh rosemary.

Combine all in a covered baking dish. Bake 375 for 1 hour until all vegetables are soft.
