Filet Mignon w/ Point Reyes Blue Sauce
1 Beef Filet whole (7lbs)
Salt and Pepper liberally all sides
Grill (5 min each of four sides)
Cut into desired steak size
Point Reyes Blue Sauce
3 oz Pt Reyes Blue Cheese
3 oz Pecorino Romano Cheese grated
1 oz Cream Cheese
1 Tblsp Butter
1/2 C half and half
Melt butter and cream cheese over low heat.
Add half and half and grated Romano until melted.
Add Blue cheese crumbles and stir until melted.
If you want a smoother sauce blend with hand mixer.
